Join our team as the Chef de Cuisine at Fat Noodle at The Star Brisbane.  

The Star Brisbane is Australia’s newest entertainment hub at the heart of the new Queen’s Wharf Brisbane precinct. The first phase is now open, with more venues and experiences on the way. The Star Brisbane offers a variety of new dining, bars, and unique entertainment options. It also includes a five-star luxury hotel, The Star Grand, and a state-of-the-art Event Centre.  

This transformational project has brought even more excitement and anticipation to burgeoning Brisbane. It will redefine how people play, shop, and socialise in the river city. 

A few of your responsibilities

  • Advise the Executive Sous Chef/Executive Chef on ways to minimise waste.
  • Manage the selection, training and development of all employees to ensure timely recruitment and career growth.
  • Overall responsibility for financial KPIs and KPOs relating to gross revenue, costs of goods sold, employee costs and other operating costs in line with budget.
  • Oversee staff rosters ensuring that The Star’s Enterprise Agreement, policies and procedures and statutory requirements are adhered to.
  • Prepare menus and pricing policies by applying a sound knowledge of:
    • local requirements, market needs, competition
    • trends, recipes, daily specials and availability of products.

 

What we will be looking for 

  • High volume culinary experience
  • Can- do team attitude 
  • Trade Certificate in Commercial Cookery, Western and Asian qualifications acknowledged.  Graduate from a Cookery School preferred
  • Demonstrated knowledge of quality food preparation in specific high volume areas
  • Menu Planning experience essential
  • Demonstrated experience in people management
  • Food Safety Supervisor qualtification

 

About you 

You will be experienced in high volume kitchen environments with sound knowledge across all sections. These roles require comprehensive knowledge of kitchen hygiene practices and OH&S standards and taking pride in keeping your section stocked and tidy. These roles are integral to the team and ensuring all preparation for your section is in line with service for the day and adhering to food safety requirements.
