This career defining role will give a highly credentialed Executive Chef, the opportunity to lead a culinary team to deliver an "on trend" menu that focus’ on locally sourced and sustainable produce. This is a dynamic and unique role at one of the most prestigious Airport Lounges, that allows you to showcase your artistic flair and style. Delivering the culinary vision for a fine dining experience across the airport lounge sector located at multiple sites across the nation, to compliment the visitor experience.
The Position
- Plan, supervise, monitor and lead your culinary team
- Bring creativity, passion and innovation for the highest food standards
- Successfully managing, mentoring and developing a kitchen team including chefs, kitchen hands, cooks and logistics.
- Deliver to our client and customer high expectations of a premium experience
- Controlling stock, preparing budgets, operating within strict budgetary constraints
- Champion the significance and accurate implementation of allergy awareness controls
- Maintaining a high standard of food hygiene, safety, infection control and cleanliness in accordance with Compass food safety program.
- Responsible for designing and planning menu ideas, creating recipes and establishing cooking standards within a high pace kitchen operation. Includes retail café offering as well as events sector delivering a range of functions from the private wedding market to corporate markets.
- Identify new market trends and potential areas of growth within the business
- Interacts with leadership to assure food production consistently exceeds the expectations of clients and guests
The Person
- Chef trade's qualification with experience in a comparable multi retail and function venue environment.
- Drive creative flair and a passion for culinary innovation
- Experience in leading, mentoring and developing teams
- Experience in developing and delivering concepts for multiple sites
- Exceptional communication skills
- In depth understanding of Occupational Health, Safety and Environment
ASIC security clearance will be required for this role (We will provide)
