ESS manages all aspects of large-scale accommodation facilities or “villages” for remote workers, providing essential comforts such as a hot meal, a clean bed, freshly laundered workwear to health and wellness facilities for those working away from home.
The Person:
The Head Chef is responsible for the day-to-day kitchen operations, ensuring all activity is delivered safely and efficiently supporting and promoting Our Safety Culture framework. The Head Chef will lead a team to prepare, cook, and serve good quality food for residents, guests, and/or clients in conjunction with the contractual requirements of the villages.
The Position:
- Manage & lead the running of all aspects of the kitchen
- Led, manage, and motivate a large team of chefs and utilities
- Take responsibility for ordering and stock control
- Passionate about delivering world-class customer service
- Follow company health, safety, and security procedures always
- Experience across a variety of industries
- Creating and executing culinary offers across a variety of different outlets
- Observation of and implementation of allergy awareness controls.
- Previous experience in an identical role
- Deliver a high expectation of a premium experience
- Function and menu development skills essential
- Excellent work ethic with great communication skills
- Ability to work under pressure while maintaining a professional manner
Qualification & Experience:
- Minimum of Certificate IV Commercial Cookery or Trade Qualification
- Minimum of five years’ experience in a commercial operation, ideally in a bulk cooking environment
- Experience leading a multi-skilled culinary team
- Functional/ Technical Skills & Competencies
- A good understanding of operating a catering operation within strict budgetary constraints
- Experience and ability to lead and mentor teams
- Food Safety Supervisor's training
- Previous menu and nutrition planning
- Prior OH&S training and/or accreditation
- Ability to work under pressure while maintaining a positive outlook and professional manner.
- Flexible approach and attitude
- Good communication skills
