Lead a dedicated and passionate team in a truly unique environment as a Head Chef at Victoria Barracks. Utilise your exceptional skills while driving exceptional service and a providing premium experience for high profile defence members. 

The Position:

• Very hands on role for a very organised Head Chef
• Small dedicated team working together to produce high end functions and Mess meals to high profile defence members
• Maintain all catering and stock controls, OH&S compliance, and HACCP with a strong focus on waste reduction.
• Drive exceptional food safety and quality with a focus on allergen and dietary requirements
• High level knowledge and experience of operational and financial performances of the defence business

The Person:

• Certificate 3 in Commercial Cookery
• You must be highly organised with previous Head Chef roles on your Resumes in similar venues / sites
• read to work side by side with your team to produce outstanding level of food across varied services - Canapes for 350, sit down dinners for up to 200, conferences for 100 plus
• High level knowledge in HACCP, allergen management and food safety
• Proven team leader with high level organisational skills who can work autonomously, with initiative and under pressure
